Recipe of the week. Stuffed Green pepper casserole

So the kids (mostly picky Megan) decided I should have ratings systems on the food so I can look it up in the cook book and check the ratings before I serve it again. Two thumbs up means they like it,Two down means they hate it  and one up with  one down means it was okay. Oh and there is a "no using your toes rule". So out of 20 possible there were 16 thumbs up and  4 thumbs down on this one. I bought everything for this meal from Save A Lot. I am not sure of the total cost as I have not added it up but it makes a big casserole.

I like my cheese a little brown you can leave it in for less time if you want it less brown

Stuffed Green Pepper Casserole

6 cups cooked rice
4 large green peppers chopped up in chunks 
2 pounds sausage
4 Jars of the pizza sauce from save a lot brand or your favorite Italian sauce or spaghetti sauce
1 8 ounce bag of mozzarella cheese. I used Italian
Salt 1/2 tsp
Pepper 1/2 tsp
Italian seasoning 1/2 tsp
Basil a few shakes..
Parmesan Cheese sprinkle to your liking.

While cooking your rice per package directions season and   fry your sausage with half the seasoning.  crumble it as its frying. If you are using the Save a Lot brand pizza sauce I used season it with the other half of the seasoning and simmer it. When everything is done,  Add it all in to a 11x 15 baking dish top it with  the cheese and bake at 350 for 40 minutes until the cheese is lightly browned.

That save a lot pizza sauce is not much like pizza sauce and a lot like an Italian sauce close to spaghetti sauce so that was why I used that. I am not a chef. I am just a mom with a bunch of kids that likes to try new things to cook for the family that is cheap. I will try hamburger with this one some time and maybe a different Italian  sauce.
